  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 2 medium sweet potatoes
  • 1/2 cup cream
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Season pork chops with salt, pepper, and thyme.
  2. Cook pork for about 4-5 minutes on each side until browned.
  3. Pour apple cider into the pan and let it simmer for 10 minutes.
  4. For the sweet potatoes, boil them in a separate pot until tender, then mash with cream and butter.
  5. Serve pork chops with the cider sauce over the mashed sweet potatoes.
