  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 4 cups thinly sliced apples
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese until smooth, then add sugar and vanilla, mixing well. Add eggs one at a time, mixing until combined.
  4. In another bowl, toss sliced apples with lemon juice, cinnamon, and brown sugar.
  5. Pour the cream cheese mixture over the crust, then top with the apple mixture.
  6. In a separate bowl, mix oats, flour, and remaining sugar together. Sprinkle over the top of the cheesecake.
  7. Bake for 50-60 minutes or until the center is set. Allow to cool before serving.
