- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 4 cups thinly sliced apples
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1 cup old-fashioned oats
- 1/2 cup all-purpose flour
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture into the bottom of a springform pan.
- In a mixing bowl, beat cream cheese until smooth, then add sugar and vanilla, mixing well. Add eggs one at a time, mixing until combined.
- In another bowl, toss sliced apples with lemon juice, cinnamon, and brown sugar.
- Pour the cream cheese mixture over the crust, then top with the apple mixture.
- In a separate bowl, mix oats, flour, and remaining sugar together. Sprinkle over the top of the cheesecake.
