2 cups graham cracker crumbs
1 cup unsalted butter, melted
4 packages (8 oz each) cream cheese
1 cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
4 cups sliced apples
1 tablespoon lemon juice
1 cup brown sugar
1 cup rolled oats
1 teaspoon ground cinnamon
½ teaspoon salt
Instructions
Preheat the oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
In a separate bowl, beat cream cheese, granulated sugar, and vanilla until smooth. Add eggs, one at a time, beating well after each addition.
Pour the cream cheese mixture over the crust.
Toss sliced apples with lemon juice, brown sugar, oats, cinnamon, and salt in another bowl.
Spread the apple mixture over the cheesecake.
Bake for 50-60 minutes or until the center is set.
Let cool, then refrigerate for at least 4 hours before serving.
Notes
For a richer flavor, use a mix of sweet and tart apples.
