1 pound chicken thighs, boneless and skinless
4 cups chicken broth
1 tablespoon ginger, finely grated
1 tablespoon garlic, minced
4 scallions, chopped
2 tablespoons soy sauce
8 ounces rice noodles
1 tablespoon sesame oil
Salt and pepper to taste
Instructions
In a large pot, heat sesame oil over medium heat. Add ginger and garlic and sauté until fragrant.
Add the chicken thighs and cook until browned on both sides.
Pour in the chicken broth and soy sauce, and bring to a simmer.
Cook for 20 minutes or until the chicken is fully cooked. Remove chicken and shred.
Add rice noodles to the broth and cook according to package instructions.
