1 pound Italian sausage
2 cups butternut squash, diced
8 ounces pasta of choice
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon red pepper flakes
Salt to taste
Fresh parsley for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned.
Add the garlic and cook for another minute.
In a separate bowl, toss the diced butternut squash with olive oil, thyme, red pepper flakes, and salt. Spread on a baking sheet and roast for 25 minutes.
While the squash is roasting, cook the pasta according to package instructions.
