A delicious chorizo and potato egg casserole that’s perfect for breakfast!

Ingredients

  • 1 pound chorizo sausage
  • 4 cups diced potatoes
  • 6 large eggs
  • 1 cup shredded cheese
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the chorizo until browned.
  3. Add the diced potatoes and cook until they are tender.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper.
  5. Combine the chorizo mixture with the egg mixture and pour into a greased casserole dish.
  6. Sprinkle cheese on top.
  7. Bake for 30-35 minutes, until set.
