  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup brewed coffee, cooled
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In another bowl, beat the cream cheese until smooth.
  5. Add sugar, vanilla, and eggs one at a time, mixing well.
  6. Stir in sour cream and coffee until combined.
  7. Pour the cheesecake batter over the crust.
  8. Bake for 55-60 minutes, or until set.
  9. Allow to cool in the oven with the door ajar.
  10. Refrigerate for at least 4 hours before serving.
