  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup light brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cranberries, sugar, and vanilla extract. Set aside.
  3. In another bowl, mix flour, oats, brown sugar, baking soda, salt, and cinnamon.
  4. Add melted butter to the dry ingredients and mix until crumbly.
  5. Press half of the mixture into the bottom of a greased baking pan.
  6. Spread the cranberry mixture over the crust.
  7. Top with the remaining crumble mixture and press gently.
  8. Bake for 30-35 minutes or until golden brown.
  9. Cool before cutting into bars.

Notes

  • For a tangier flavor, consider adding a few tablespoons of lemon juice to the cranberry mixture.
  • Serves well with whipped cream on top.
