A delicious and nutritious breakfast bowl featuring sweet potatoes and turkey bacon.

Ingredients

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 1 cup spinach
  • 1 avocado
  • 2 eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, salt, and pepper.
  3. Spread them on a baking sheet and roast for 25-30 minutes or until tender.
  4. Cook the turkey bacon in a skillet until crispy, then remove and chop.
  5. In the same skillet, sauté the spinach until wilted.
  6. Fry or poach the eggs to your desired doneness.
  7. Assemble the bowl: layer the roasted sweet potatoes, spinach, bacon, and top with avocado and eggs.
  8. Season to taste and serve warm.
