A delicious and healthy casserole that combines sweet potatoes, eggs, turkey bacon, and fresh vegetables.

  • 2 cups sweet potatoes, peeled and diced
  • 6 eggs
  • 1 cup turkey bacon, cooked and chopped
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup spinach, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine sweet potatoes, turkey bacon, bell pepper, onion, and spinach.
  3. In another bowl, whisk together eggs, salt, and pepper. Pour over the sweet potato mixture and stir to combine.
  4. Transfer the mixture to a greased casserole dish.
  5. Bake for 30-35 minutes until set and golden on top.
