2 cups all-purpose flour
1 teaspoon salt
1 cup unsalted butter, chilled and diced
6 to 8 tablespoons ice water
6 cups sliced apples
3/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons lemon juice
1 tablespoon cornstarch
1 tablespoon butter
Instructions
Preheat the oven to 425°F (220°C).
In a mixing bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
Stir in ice water, one tablespoon at a time, until mixture forms a ball.
Roll out half of the dough to fit a 9-inch pie plate. Place bottom crust in pie plate.
In another bowl, toss apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Pour apple mixture into crust; dot with butter.
Roll out remaining dough to cover pie; seal and flute edges. Cut slits in top crust for steam to escape.
Bake in preheated oven for 15 minutes. Reduce temperature to 350°F (175°C) and continue baking for 35 to 45 minutes, until apples are soft and crust is golden brown.
Notes
Let the pie cool for at least 2 hours before slicing for easier serving.
Serve with vanilla ice cream for an extra indulgent treat.
