2 Cornish hens
1 cup olive oil
1/4 cup fresh lemon juice
4 cloves garlic, minced
2 teaspoons dried thyme
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon smoked paprika
Instructions
In a bowl, combine olive oil, lemon juice, garlic, thyme, salt, pepper, and smoked paprika to create the marinade.
Place the Cornish hens in a large resealable bag and pour the marinade over them. Seal and refrigerate for at least 2 hours, preferably overnight.
Preheat the grill to medium heat.
Remove the hens from the marinade and place them on the grill. Cook for 45-50 minutes, turning occasionally, until the internal temperature reaches 165°F.
Remove from the grill and let rest for 10 minutes before serving.
Notes
