  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 orange, zested and juiced
  • 3 tablespoons fresh rosemary, chopped
  • 3 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, lemon juice, orange juice, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture under the skin of each Cornish hen.
  4. Place the hens on a roasting pan.
  5. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
  6. Let the hens rest for 10 minutes before carving.
