A delicious and hearty casserole infused with the flavors of huevos rancheros and made with turkey bacon.

  • 1 cup milk
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 cup cooked turkey bacon, crumbled
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 diced bell pepper
  • 1 diced onion
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onions and bell pepper until soft.
  3. In a bowl, whisk together eggs, milk, cumin, chili powder, salt, and pepper.
  4. Add the sautéed vegetables, diced tomatoes, and turkey bacon to the egg mixture.
  5. Pour the mixture into a greased casserole dish and top with shredded cheese.
  6. Bake for 25-30 minutes or until the eggs are set.
  7. Let cool for a few minutes before serving.
