  • 6 large eggs
  • 4 slices turkey bacon
  • 4 slices chicken ham
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs, salt, and pepper.
  3. Add the chopped spinach and diced bell pepper to the egg mixture.
  4. In a skillet, cook the turkey bacon until crispy, then chop into small pieces and mix with the egg mixture.
  5. Pour the egg mixture into a greased muffin tin.
  6. Top each egg cup with pieces of chicken ham.
  7. Bake for 20-25 minutes or until the eggs are set.
  8. Allow to cool slightly before removing from the tin.
