Delight in these Mediterranean quesadillas packed with fresh spinach, creamy feta, and gooey mozzarella, all harmonized with the sweetness of red onion.

Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red onion, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced red onion and cook until softened, about 5 minutes.
  3. Add spinach and cook until wilted.
  4. In a separate bowl, mix the cooked spinach and onion with feta, mozzarella, oregano, salt, and pepper.
  5. Spread the mixture over half of each tortilla and fold over.
  6. Cook each quesadilla in the skillet for 3-4 minutes on each side or until golden brown and cheese is melted.
  7. Slice and serve warm.

Notes

  • Feel free to add chopped olives or sun-dried tomatoes for extra flavor.
  • Serve with a side of tzatziki for a refreshing dip.
