- 2 cups jasmine rice
- 4 cups chicken broth
- 1 pound chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup cilantro
- 2 jalapeños
- 2 cloves garlic
- 1 lime
- 1 avocado
- Rinse the rice under cold water until the water runs clear.

- Once rice is ready, fluff with a fork and serve topped with seared chicken and drizzled with green sauce.
Notes
- For extra flavor, marinate the chicken in lime juice and spices for a few hours before cooking.
- Adjust the heat of the green sauce by removing seeds from jalapeños.
