  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 pound chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup cilantro
  • 2 jalapeños
  • 2 cloves garlic
  • 1 lime
  • 1 avocado

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat and add chicken thighs to sear until golden brown.
  3. Add cumin and paprika, stirring for 1 minute before pouring in chicken broth.
  4. Add the rinsed rice and bring to a boil. Reduce heat, cover, and simmer for 18-20 minutes or until rice is cooked.
  5. While rice is cooking, blend cilantro, jalapeños, garlic, lime juice, and a pinch of salt to make the green sauce.
  6. Once rice is ready, fluff with a fork and serve topped with seared chicken and drizzled with green sauce.

  • For extra flavor, marinate the chicken in lime juice and spices for a few hours before cooking.
