  • 1 pound chicken thighs
  • 2 cups rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 green bell pepper, chopped
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add chicken thighs and cook until browned on both sides.
  3. Stir in the rice, cumin, paprika, salt, and black pepper.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked.
  6. In a blender, combine green bell pepper, cilantro, lime juice, and a little water to make the green sauce.
  7. Serve the chicken and rice topped with green sauce.

Notes

  • For extra flavor, marinate the chicken in some spices before cooking.
