- 1 pound chicken thighs
- 2 cups rice
- 4 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 green bell pepper, chopped
- 1/2 cup cilantro, chopped
