A delicious and indulgent layer cake featuring creamy mascarpone and crunchy pistachios.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup milk
  • 1 cup crushed pistachios
  • 2 cups mascarpone cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in vanilla extract.
  5. Gradually add the flour and milk, alternating between the two.
  6. Fold in the crushed pistachios.
  7. Divide the batter between prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. In a separate bowl, mix mascarpone cheese with a bit of sugar if desired.
  11. Layer the cakes with mascarpone cheese in between and on top.

Notes

  • For added flavor, try toasting the pistachios before adding them to the cake batter.
  • Make sure the mascarpone is at room temperature for easy spreading.
