Instructions

  2. In another bowl, mix coconut milk, egg, and melted coconut oil.
  3. Gradually add the wet ingredients to the dry ingredients, stirring gently.
  4. Fold in shredded coconut.
  5. Heat a skillet over medium heat and lightly grease it.
  6. Pour 1/4 cup of batter for each pancake onto the skillet.
